We are ice cream obsessed at our house and just because the weather turns colder doesn't mean we stop eating it! Like pumpkin ice cream, peppermint ice cream is a seasonal flavor that you usually only see around the holidays. But it's delicious year-round!

You will want to make sure you do this thoroughly to dissolve the sugar.

Once the ingredients have been combined, carefully pour the mixture into your ice cream machine's bowl. Place the bowl into the rest of the machine, secure the lid, and set the ice cream maker to churn. Depending on your ice cream machine, this ice cream will churn for about 15 to 25 minutes depending on the settings. If you are unsure, Carli advises to "read the instruction manual of your ice cream machine."

It's imperative that you have an ice cream machine for this recipe. We asked Carli about this, and she confirmed that "an ice cream machine is essential." We conducted a quick search on Amazon and found that ice cream machines vary widely in pricing from $30 up to over $200. Carli confirmed that you "don't need to invest in a professional ice cream machine for this recipe or for most at-home ice cream recipes." Thank goodness!

Once the ice cream has churned, remove the bowl from the machine and place it in the freezer for at least 4 hours. You will know the ice cream has been sufficiently churned because its texture will thicken slightly, and it will be cold throughout.

Very creamy and rich - the white chocolate balances the peppermint nicely. I did 2 tsp of peppermint extract and the recipe doesn't specify how much salt - I added 1/8 tsp. Also, I didn't find that 170 degrees was even close to getting the custard temp - I took it to around 200 degrees.

In the bowl of a stand mixer, combine the cold cream, peppermint and vanilla extracts. Whip cream until stiff peaks form. Fold in the sweetened condensed milk and crushed candy canes (reserve just a little candy cane for topping). Pour into a 9x5-inch loaf pan and sprinkle with the reserved candy canes, cover with plastic wrap or foil and freeze for several hours or until firm. Makes around 6 servings.

The only thing I did differently the second time around was the crush the peppermint up a little more. I had some pretty big chunks in the first batch (as pictured below), it was better with smaller pieces in my opinion. This is now a permanent recipe in my collection!

You can use candy canes or those little round peppermint candies, commonly known as Starlight Mints. Put them in a plastic zipper gallon bag and squeeze out the air. Zip it shut and crush the candy with a meat mallet or hammer.
